Thattu is an Indian street food concept at Politan Row Chicago featuring cuisine from the southwestern coastal state of Kerala. A self-taught chef with a lifelong passion for food, Margaret Pak worked in the corporate sector for twelve years before delving into food professionally. After marrying her husband, who is native to Kerala, India, the couple made regular trips to his home, where Pak learned the nuances of Kerala cuisine from her mother-in-law. Since 2017, Margaret has cooked at Korean-Polish restaurant Kimski and hosted a series of Kerala-inspired kitchen takeovers on the side.
