15 years ago, it was 2003, Sudhir Hirpara opened a grocery store named, “Indian Super Market”, simply named, for it being the first Indian grocery store in the area offering imported goods such as spices, herbs, teas, chocolates, canned goods, a variety of cheeses and yogurts. 10 years later, 2013, Sudhir Hirpara decided to expand his grocery operation to include a healthy vegetarian restaurant. “Rajwadi Vegetarian Indian Fast Food”, with a unique approach to a vegetarian menu, made from fresh vegetables, no use of canned foods, and no use of microwave or frozen foods. A bold & aromatic rice dish of extra-long-grain Basmati rice, red & green bell peppers, carrots, peas, cauliflower, green beans, onions, garlic, ginger, homemade Ghee (clarified butter) and a variety of warm spices (whole mace, cardamom pods, star anise, bay leaves, cinnamon, turmeric, black pepper, biryani masala). A Gujarati steamed savory cake dish: chana dal (split chick-pea lentils) is soaked overnight, fermented with yogurt and made into a batter. It is then steamed in round dishes, cut into square/diamond shapes, and drizzled with a tempering of mustard seeds, green chillies, and canola oil. Garnished with shredded coconut and cilantro.
